Nicolasa’s Recipe: Relleno de Pan
This dish is good served with turkey or alone.
It is very delicious with a good cup of coffee.
Nicolasa’s Mexican Cornbread Stuffing
2 Pkgs Yellow cornbread mix
1/2 cup of celery – chopped up
1/2 cup green or red bell peppers
1/4 cup onion, chopped finely
2 chiles serranos or jalapeños
2 1/2 cups of Chicken Broth
1 1/2 Sticks Butter (softened).
1 tsp of sage (ground)
Prepare cornbread mix according to package directions:
1. Heat oven to 350 F °
2. Combine all ingredients in large Bowl.
3. Mix Well. Pour into 9′ x 13′ pan.
4. Bake at 350 F ° for 35 minutes covered.
5. Uncover and bake 15 to 20 minutes, or until golden brown.
